An iPhone port by itself will not make the game popular. Without a decent
leaderboard or leaderboard features, this version will have no success.

I think there's a fairly big market for games like this. My dad does what I
can only describe as a modern day high tech Far Cry: he needs something to play
every morning on his commute. Something fun and addictive. He doesn't really
care about graphics or anything, just something that's fun to try out every
day.

Well, it's not that kind of modern day high tech Far Cry. It's pretty much the
same as Dwarf Fortress, the only differences are the graphics.
EDIT: And a leaderboard, which is a must-have.

I don't understand why the game takes so much disk space (700mb for a fortress
of under 10 dwellings). Is there a minium requirement for all of the images?

Unlike modern games, in Dwarf Fortress it is important for the game to always
be on the complete disk. There are no loops in the gameplay, you can always
load the last saved game. The saving process is not very fast though, so it is
preferable to close and reopen the application.

Not exactly. The minimum requirement for the game is 256MB of free disk space.
The game files are compressed with 7z.
